One Bowl Vegan Banana Bread

THE QUICKEST BANANA BREAD

The humble banana bread is always a win whatever the occasion – whether it is a breakfast, snack, cake sale etc. One of my favourite things about banana bread, is how quick and easy they are to make. This week I have brought you a vegan banana bread! If you want the truth about this recipe – it’s because I was wanting to run down my cupboards before moving home and had not eggs or butter!).



 

Makes: 1 Loaf. Cooking Time: 50 minutes


INGREDIENTS

  • 4 bananas

  • ½ cup of neutral tasting oil (vegetable, sunflower, rapeseed)

  • 2 tsp vanilla extract

  • ½ cup of coconut sugar or light brown sugar

  • 2 cups plain flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp salt

METHOD

  1. Pre-heat the oven to 175C (350F) and line your loaf tin with baking paper.

  2. In a large mixing bowl, mash the bananas and then add the oil, vanilla extract and coconut sugar – use a hand whisk to combine

  3. Then slowly fold in the flour, baking soda, salt and cinnamon until combined (TIP – If you over mix the loaf can come out dense, so be sure to combine slowly and stop when appropriate)

  4. Transfer your mixture to your loaf tin and bake for 35-40 minutes until a skewer inserted into the centre comes out clean.
