One Bowl Vegan Banana Bread

THE QUICKEST BANANA BREAD
The humble banana bread is always a win whatever the occasion – whether it is a breakfast, snack, cake sale etc. One of my favourite things about banana bread, is how quick and easy they are to make. This week I have brought you a vegan banana bread! If you want the truth about this recipe – it’s because I was wanting to run down my cupboards before moving home and had not eggs or butter!).

Makes: 1 Loaf. Cooking Time: 50 minutes
INGREDIENTS
4 bananas
½ cup of neutral tasting oil (vegetable, sunflower, rapeseed)
2 tsp vanilla extract
½ cup of coconut sugar or light brown sugar
2 cups plain flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
METHOD
Pre-heat the oven to 175C (350F) and line your loaf tin with baking paper.
In a large mixing bowl, mash the bananas and then add the oil, vanilla extract and coconut sugar – use a hand whisk to combine
Then slowly fold in the flour, baking soda, salt and cinnamon until combined (TIP – If you over mix the loaf can come out dense, so be sure to combine slowly and stop when appropriate)
Transfer your mixture to your loaf tin and bake for 35-40 minutes until a skewer inserted into the centre comes out clean.
