Terry's Chocolate Orange Cookies

What is Christmas without a Terry's chocolate orange? Why not make this Christmas classic into a cookie! A guaranteed crowd pleaser at every gathering this holiday season.

Makes: 10 cookies. Preparation Time: 10 minutes. Cooking Time: 12 minutes.


INGREDIENTS

  • 120g butter

  • 75g caster sugar

  • 75g light brown sugar

  • 1 egg

  • 1 tsp orange essence

  • 1/2 tsp bicarbonate of soda

  • 1/4 tsp salt

  • 180g plain flour

  • 150g terrys chocolate orange chopped up (you can also use standard milk chocolate if needed)

  • 10 segments of terry's chocolate orange for the top


METHOD

  1. Preheat the oven to 180 degrees.

  2. Cream together the butter and sugars.

  3. Add the egg and orange essence to the bowl and whisk into the mixture.

  4. Add the bicarbonate of soda, salt and flour and mix well.

  5. Finally fold in the chopped chocolate.

  6. Line 2 baking trays with baking paper, and using a tbsp, spoon out 10 cookies across the 2 baking trays (ensure you leave enough space between each cookie as they will spread out). Top each with a chocolate orange segment and bake for 12 minutes.

  7. Leave to cool for 10 minutes before enjoying warm, or leave to cool completly before storing them in a airtight containter for up to 3 days.
